Best cancer fighting vegetables - Vegetables that prevent cancer

Arugula Compound Suppresses 73% of Lung Cancer Cells: Arugula, also called salad rocket or rucola, is particularly rich in erucin, which was shown in this new study to slow the growth of human lung cancer cells by 73%. Erucin is very similar to the well-known compound sulforaphane found in broccoli. In fact, after we eat broccoli, up to 30% of the sulforaphane is transformed into erucin in our bodies—and likely plays a key part in broccoli’s benefits. But this leafy green may be even better than broccoli. Why? Because we can only absorb about 60% of the sulforaphane from eating raw broccoli, but we absorb a stunning 94% of the erucin from arugula, making it a potential anticancer superfood. Erucin is also potently cytotoxic to prostate cancer, colon cancer, and breast cancer, according to lab studies. Interestingly, this super-vegetable grows wild in the Mediterranean and is used in the traditional local cuisine—which is known to have the lowest cancer rates in Europe! Arugula has a fresh, peppery taste (the stronger the better) and goes great with other leafy greens in salads (especially with olive oil, balsamic vinegar, tomatoes and parmesan cheese), pasta salads, quiche, sauteed with seafood, and even tastes great on pizza. And alkaline diet fans take note: arugula is an alkaline superfood with over 3 times the alkalizing power of pure lemon juice!
